LOTO – Our flagship wine
LOTO is the heart of Villa Santo Stefano – a masterfully crafted cuvée inspired by the great French winemaking tradition. Cabernet Sauvignon, Merlot, Cabernet Franc, and Petit Verdot come together in a wine of exceptional depth, structure, and harmony.
To maximize the quality of every single grape, only three to four clusters are allowed per vine – an uncompromising approach that guarantees concentration and expression. The care of the vines, selective hand harvesting, and meticulous processing are entrusted exclusively to our experienced winery team.
A wine born from precision, passion, and deep respect for the terroir.

From Vineyard to Award-Winning Elegance

LOTO, our signature wine, is inspired by great French blends – an elegant assemblage of Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot. To preserve the purity and expression of the grapes, the harvest is carefully done by hand, with a deliberate limit on the number of clusters per vine. Since 2014, a state-of-the-art, computer-controlled fermentation system has supported precise temperature control and vinification management. This allows the natural character of the grape to be preserved in its purest form. Fermentation lasts about twelve days, followed by aging for 12 to 16 months in selected French barriques depending on the variety and vintage. Our climate-controlled barrique cellar, maintained at a constant 15°C and 83% humidity, creates ideal conditions for developing depth, elegance, and a harmonious expression of origin.

"I have very simple tastes: I am always happy with the best."
